To this end, Anne follows the principles of organic and biodynamic agriculture and, in addition, has planted hedges and fruit trees around the vineyards and installed some beehives. This cuvée is made with grapes from the youngest Merlot vines, to which a smaller percentage of Cabernet Franc is added.\u003c\/p\u003e\r\n\u003cp\u003eThe Saint-Émilion \"Envolée de Lapelletrie\" by Chateau Lapelletrie is made from a blend of a majority of Merlot and a smaller part of Cabernet Franc, varieties that are grown according to biodynamic principles. The vines are approximately 15 years old and stand on a plateau formed by clay and limestone soils. Manual harvesting is followed by a double selection of the bunches in the cellar and then spontaneous alcoholic fermentation using only indigenous yeasts. Maceration on the skins is accompanied by \u003cstrong\u003egentle extraction techniques\u003c\/strong\u003e and the wine is then placed in cement vats for a few months' maturation before bottling.\u003c\/p\u003e\r\n\u003cp\u003eChateau Lapelletrie's Saint-Émilion 'Envolée de Lapelletrie' has a ruby red colour with garnet highlights.
