The vineyards are cultivated at an altitude of between 200 and 500 metres above sea level and enjoy a Mediterranean climate, which allows the grapes to ripen well. Harvesting is done manually and the three varieties are vinified separately, with fermentation in stainless steel tanks at a controlled temperature of 28°-30°C, with a maceration period on the skins of a couple of weeks.
