The vines, grown using both the Trentino pergola and simple guyot systems, have an average age of around 33 years and grow on hillsides characterised by a subsoil with a strong presence of clay and limestone. After harvesting, the grapes are \u003cstrong\u003efermented in steel for 9 days\u003c\/strong\u003e at a temperature of between 25 and 31 degrees Celsius.
