Sella & Mosca's Vermentino 'Ambat' originates in the north-eastern part of the island of Sardinia bathed by the river Coghinas and protected from cold winds by the Limbara massif. The winery was founded by the engineer Sella and the lawyer Mosca, who decided to reclaim some Sardinian land to give life to excellently cultivated vineyards in flourishing and welcoming soil. We are talking about a vast territorial extension that reaches almost 600 hectares under vine throughout the island, entirely cultivated following a work philosophy that respects biodiversity, the ecosystem surrounding the vineyards and, thus, the natural growth and development phases of plants and raw materials. The quality of the products was further raised thanks to the collaboration with Antonio Marras: from this collaboration the winery's first Metodo Classico was born.
The vineyards of Sella & Mosca's Vermentino "Ambat" grow near the slopes of Mount Limbara, a special place, since it encounters sea breezes and hilly breezes that give the grapes structure and finesse; the climate is Mediterranean with sunny, dry summers and mild winters with substantial temperature swings between day and night for grapes that are perfectly ripe at harvest time; the soil is calcareous and clayey, a characteristic that emphasises the sapid component. Harvesting is done manually and the bunches are carefully transported to the cellar. Soft pressing takes place in the cellar; alcoholic fermentation with selected yeasts in steel follows; it matures briefly in French barriques, a practice that facilitates evolution. It stays a few months in the bottle.
The colour of Sella & Mosca's Vermentino 'Ambat' is a straw yellow with intense reflections. On the nose it releases aromas of white flowers such as jasmine and hawthorn, ripe yellow-fleshed fruit and tropical fruit combined with distinct hints of dried fruit. In the mouth, it is rich, elegant and enveloping with a good final persistence that lingers glass after glass. It pairs perfectly with grilled fish dishes, shellfish and crustaceans; also interesting with risottos and fresh cow's milk cheeses. An authentic product that recalls all the flavours of the Sardinian land, offering an intense and unique experience.
